What are they?
Soft corn tortillas filled with sautéed vegetables, rolled up and baked with a rich, homemade enchilada sauce and melted cheese on top.
Ingredients:
For the filling:
- 1 tablespoon olive oil
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper (any color), chopped
- 1 zucchini, chopped
- 1 cup mushrooms, sliced
- 1 cup corn kernels (fresh or frozen)
- 1 can black beans, drained and rinsed
- Salt and pepper to taste
- 1 teaspoon cumin (optional)
- 1 teaspoon chili powder (optional)

For the enchilada sauce (or use store-bought):
- 2 tablespoons vegetable oil
- 2 tablespoons flour
- 1 tablespoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon oregano
- 2 tablespoons tomato paste
- 2 cups vegetable broth
- Salt to taste

Other:
- 8 corn tortillas (or flour tortillas)
- 1 to 1½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- Fresh cilantro, avocado, and sour cream (optional for topping)


Instructions:
1. Make the enchilada sauce:
- Heat oil in a pan, add flour and stir constantly for 1 minute.
- Add spices and tomato paste, stir well.
- Slowly pour in vegetable broth, whisking to avoid lumps.
- Simmer for 5-7 minutes until thickened. Season with salt. Set aside.
2. Cook the filling:
- Heat olive oil in a large skillet.
- Add onion and garlic, cook until softened.
- Add bell pepper, zucchini, and mushrooms. Cook 5–6 minutes until tender.
- Stir in corn and black beans. Season with salt, pepper, cumin, and chili powder.
- Cook another 2 minutes. Remove from heat.


🌯 3. Assemble the enchiladas:
- Preheat oven to 375°F (190°C).
- Warm the tortillas slightly so they don’t crack.
- Spread a little enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the veggie mix and a sprinkle of cheese, then roll it up.
- Place seam-side down in the dish. Repeat with all tortillas.
- Pour remaining sauce over the top. Sprinkle with more cheese.
🔥 4. Bake:
- Cover with foil and bake for 20 minutes.
- Remove foil and bake another 10 minutes until cheese is bubbly and melted.
