Ingredients

  • 1 medium cauliflower (cut into florets)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp chili powder
  • Corn tortillas
  • 1 avocado
  • Juice of 1 lime
  • 2 tbsp vegan yogurt
  • Fresh cilantro & pickled onions for topping

Method

  1. Toss cauliflower with oil & spices, roast at 425°F (220°C) for 25 min until crisp.
  2. Blend avocado, lime juice, yogurt, and salt → smooth crema.
  3. Warm tortillas, fill with roasted cauliflower, drizzle crema, and top with cilantro & pickled onions.
