Ingredients
- 1 medium cauliflower (cut into florets)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp chili powder
- Corn tortillas
- 1 avocado
- Juice of 1 lime
- 2 tbsp vegan yogurt
- Fresh cilantro & pickled onions for topping
Method
- Toss cauliflower with oil & spices, roast at 425°F (220°C) for 25 min until crisp.
- Blend avocado, lime juice, yogurt, and salt → smooth crema.
- Warm tortillas, fill with roasted cauliflower, drizzle crema, and top with cilantro & pickled onions.
